Wednesday night recipe night

This is a great and easy recipe to fix for a very filling meal.
Super Quick Chinese Noodles and Chicken (or Pork)

2 packages Ramen Noodles (Chicken flavor)
2 chicken breasts or 2 boneless pork chops, partially frozen
1/2 onion, sliced vertically
4-5 button mushrooms, cleaned and sliced
1/2 package frozen Japanese vegetables
2 tablespoons vegetable oil
1 teaspoon soy sauce
2 teaspoons cornstarch
3/4 cup chicken stock

Cook the noodles in boiling water. Drain and keep warm.
Slice the chicken in small strips.
In a large very hot skillet, add the oil and the chicken.
Cook until done and remove. Keep warm. Add the onions and cook
them for about 4 minutes. Add the mushrooms and cook for another
2-3 minutes. Add the vegetables and cook until heated through.
Keep stirring so that nothing sticks.
While this is cooking, mix the soy sauce, stock and cornstarch
together. Add the chicken and cook for another 2 minutes.
Then add the stock mixture and cook until it turns clear and
the sauce is thickened.
Mix the noodles in with the vegetable and chicken mixture.

Serve on hot plates. Add Chinese noodles if you like the crunch.

The partially frozen meat will slice much easier.
